There's no doubt that buffalo meat is a healthier
alternative to beef. It is raised on grassland and free
to graze natural grass, whether in the US or in Asia.
It tastes. More or less the same as beef and is cooked
by a good cook you would probably not be able to tell
the difference.
The good thing about buffalo meat is that it is a
dark-red meat with much less fat than beef. There is no
marbling in the meat and the subcutaneous layer of fat
on any buffalo carcass is thinner than that on a cow
carcass, even if the two animals have been fed on
exactly the same food. The buffalo converts whatever it
eats into meat rather than fat and this includes the
American bison and the Asian buffalo.
Less fat in meat means less cholesterol and so less
blood cholesterol after eating the red meat from the
buffalo. There is more protein per serving in buffalo
meat, so it gives you more energy, and fewer calories.
Like venison, buffalo meat is low in calories and good
if you are on a weight-loss diet. Unlike venison there
is no 'gamey' taste and no greasy feel in your mouth
after you have eaten it, as there sometimes is after
eating beef.
You need to take care when cooking buffalo meat, as it
will cook faster than beef because it has less fat to
insulate it during the cooking process. You can grill a
buffalo steak, casserole buffalo pieces, braise, roast
and fry buffalo meat just as you can beef, and
substitute buffalo for beef in any recipe as long as
you remember that the meat will take less time to cook.
If you forget and the pieces are being casserole they
will just fall apart, as I have found that buffalo meat
is very tender- much more so than beef, but this may
just be my experience.
As we are all becoming more health conscious we realize
that too much traditional red meat in our diets is not
good for our health, particularly for our blood and
heart, but as we try out 'new' meats such as ostrich,
buffalo, venison and other game, we are embarking on a
healthy culinary journey that will hopefully delight
our taste buds.
We get Mozzarella cheese from buffalo too and that is
healthy although the packaged variety we have in some
supermarkets is nothing like the fresh Mozzarella you
can taste in Italy, and this is healthy and tasty.
If you are American you may have some qualms about
eating bison, but you are not damaging the eco-system
by eating it as it is now farmed in a sustainable way.
Next time you go to your supermarket, why not pick up
some buffalo meat? If it's frozen, it is best to
defrost it in the refrigerator or zap it in the
microwave - don't expose it to air at room temperature
as it might change colour as venison does. It's a
healthy alternative to beef, and tastes almost the
same, so give it a try.
