Small Game Poultry

If you are going to enjoy a fine Italian meal today, why not try some small game poultry such as Cornish hens or quail? These tiny cousins of the chicken are absolutely wonderful within a large Italian meal. You can basically serve these tiny birds up in many different fashions, and whatever way you cook them they will be a hit with the family. Game poultry is a very versatile bird, and you can find many recipes today that involve the grilling or salt roasting of these meats. When you are going to cook this type of bird for your family, you will want to include some wonderful grilled vegetables and a fine Italian soup, as this will bring the meal to its peak of perfection.

Grilled Bird

One of the most simple and delightful recipes for small game poultry is grilled with olive oil and rosemary. This is a very simple method of cooking the bird, as you really do not need to watch the bird very closely. You simply rub the bird with the olive oil and rosemary, and then set the bird in either the oven at 400 degrees or the outdoor grill. This will ensure that the bird is tender on the inside, with a crispy golden skill on the outside. There are many ingredients that you can add to this rub if you so desire; yet if you are looking to keep it traditional and simple this is the route to go. This is a recipe that everyone in the family can enjoy, and this even includes those picky kids that do not seem to like anything.

Slow Cooked Bird

If you are thinking about serving up some small game poultry, then why not consider slow cooking the bird in a soup or stew? This is a great way to bring out the true flavor of this type of bird, as the slow cooking allows for the juices to seep and the soup to obtain the essence of the bird itself. There are a number of ways this can be done, but if you are looking at traditional then the large pot on the stove for long hours is truly the only way to go. In addition to the game bird, you can add: potatoes, carrots, leeks, and turnip. This will bring the flavor of the soup to a warm and inviting state, and once you have added the herbs and spices that complete the dish you can be sure that this soup will not be ignored.

The Market Or The Fields

One of the biggest decisions you are going to have to make, is just how fresh do you want your small game poultry? If you are not overly concerned that the bird was caught immediately before cooking, then you could actually find what you are looking for at the local marketplace. Freshness may be a factor to some, so hunting your own game birds may in fact be your only option unless you pay someone else to do it for you.
